Vegetable Soup Recipe

Ingredients: 

  • 12 carrots peeled and diced
  • 4 celery stick diced
  • 1 white onion diced
  • 1 leek diced
  • 6 potatoes diced
  • 2 or 3 vegetable stock cubes
  • Seasoning

Method: 

  1. Sweat of all vegetables with a knob of butter until soft
  2. Add the potatoes
  3. Cover all contents with water
  4. Add the vegetable stock cubes
  5. Bring to the boil and reduce to a simmer for a further 2 hours
  6. Blend in a food processer
  7. Add more water until you reach your desired consistency
  8. Taste for seasoning
